Ingredients:

For the Cookies:

  • 2 cups all-purpose flour
  • 2 tablespoons Earl Grey tea leaves (from about 2-3 tea bags)
  • 1 tablespoon dried culinary lavender buds
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.

  2. Prepare Earl Grey and Lavender: In a food processor or spice grinder, pulse the Earl Grey tea leaves and dried lavender buds until finely ground. Set aside.

  3. Make Cookie Dough: In a medium bowl, whisk together the flour, ground Earl Grey tea leaves, baking powder, and salt.

  4. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, using a hand mixer or stand mixer.

  5. Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

  6. Incorporate Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.

  7. Chill Dough: Wrap the cookie dough in plastic wrap and chill it in the refrigerator for about 30 minutes to firm up.

  8. Shape Cookies: Once chilled, scoop out tablespoon-sized portions of dough and roll them into balls. Place the dough balls on the prepared baking sheets, leaving some space between each cookie for spreading.

  9. Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.

  10. Cool: Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

  11. Make Lemon Glaze: In a small bowl, whisk together the powdered sugar, fresh lemon juice, and lemon zest until smooth.

  12. Glaze Cookies: Once the cookies are completely cooled, drizzle the lemon glaze over the top of each cookie using a spoon or piping bag.

  13. Let Set: Allow the glaze to set before serving or storing the cookies.
